Niels Schipper always put his grain bill and hops on the label of the beer so it was relatively easy to reverse engineer this beer. So back in 2014 before I made this beer for the first time I flicked Niels an email to help formulate the clone recipe. Here's that email

Hi Neils,

I'm a huge fan of your beer and find myself drinking far too frequently (if that's even a thing...) I'm also an avid homebrewer and have decided to have a crack at cloning one of your beer—Scallywag. I hope you don't mind—it's purely out of respect and admiration that I'm even attempting to do so. The inclusion of the ingredients and stats on the label seems like an invitation to try :)

Jeez — what a suck-up! Anyway, he was suitably honoured and impressed with my email writing that he suggested a yeast swap. The end result was an excellent beer.

Now fast-forward 11 years and I've circled back and brewed it again. And it contunues to live up to the hype—yum! I'm super keen to brew it again. I might even send some along to Niels, next time. 🍻
